Dairy-Free Pesto tastes just as good as the traditional version. It is nutty with a fresh tangy flavour.
200g Organic roasted peanuts
4-6 Garlic cloves
1 tbsp Lemon juice
4 Handfuls Fresh basil
6 tbsp Organic nutritional yeast flakes
1 tsp Sea salt
1/2 tsp Black pepper, cracked
200ml Oragnic extra virgin olive oil
4 tbsp Water (more if needed)
Blend the basil, roasted peanuts, garlic, lemon juice, water, nutritional yeast, and salt/pepper in the food processor, while adding olive oil a little at a time. Alter consistency by adding water.
